Pink Potato Salad

From HTOC 25th Anniversary Cookbook

Ingredients

  • 2 lb. potatoes

  • 1 large beet

  • 3 hard-boiled eggs, chopped

  • 1 large cucumber, diced

  • ½ c. dill pickle, diced

  • 3 scallions, chopped

  • 1 heaping Tbsp. capers

  • 2 Tbsp. olive oil

  • 3 Tbsp. white wine vinegar

  • 1 tsp. salt

  • Ground pepper

  • ½ tsp. dried dill

  • ½ C. sour cream

Directions

1. In separate pots, boil the potatoes and the beet until just tender; drain and remove the skins.

2. Chop the potatoes into coarse chunks; dice the beet and put into a large bowl.

​

3. Add the eggs, cucumber, pickle, scallions, and capers; mix well.

​

4. Mix in the olive oil, vinegar, salt, pepper, and dill.

​

5. Finally, stir in the sour cream, mixing well to make sure each piece of the salad is coated.

​

6. Chill, covered, overnight in refrigerator before serving. Makes 8 to 10 servings.
